These courses teach a range of basic skills to acquire in selecting and preparing fish as well as offer a superb array of aromatic seafood dishes to prepare.

The aroma of sizzling salmon or a bubbling Fish Pie will inspire all fish fanatics. There are two different fish courses to choose from.

On this course you will create The Cooking School's own velvety Cullen Skink (smoked haddock and herb soup), Salmon Skewers with Pistachio and Yoghurt Dressing; Coconut Thai-style Fish Curry, King Crab Cakes and Smoked Mackerel Pâté. Demonstrations follow showing how to make Moules Mariniere and Whitebait with Lemon.

Here you will prepare delicious Persian-style Prawn Patia, Escabeche of Mackerel, The Cooking School's Fabulous Fish Pie, Fish Cakes and Sardine Pâté.  A demonstration of Whole Poached Salmon and Seared Scallops follows.
