Spiced Baked Potato Wedges

A quick, easy and tasty recipe. Serves 4.

Ingredients

4 medium-sized baking potatoes
8 tablespoons olive oil
4 level teaspoons curry powder
1/2 teaspoon chilli powder - optional
pinch of rock salt - optional
freshly ground black pepper

colander
chopping board
sharp knife
mixing bowl
tablespoon
teaspoon
non-stick baking tray
fork
saucepan

How to make it

1. Scrub the potatoes and rinse them under cold water. Pat dry.

2. Cut the potatoes into wedges by cutting the potato in half length ways then cutting each half into 4 equal size wedges.

3. Place the potato wedges in a pan of boiling water and simmer for 8 minutes. This is called par-boiling. Drain the potato into a colander and place it in a mixing bowl.

4. In a small bowl, mix the dry ingredients thoroughly and add the olive oil to make a paste. Heat the oven to 200°C/Gas 6.

5. Pour the spice mixture onto the par-boiled potatoes and use your hands to coat the potatoes thoroughly.

6. Spread the potatoes in a single layer on an ungreased non-stick baking tray.

7. Bake for 25-30 minutes, or until the potatoes are golden. Test with a fork. The potatoes should be soft inside. Serve piping hot.
