Wilted Spinach and Lime Scented New Potatoes

A fantastic easy to follow recipe to complement any dish. Makes 1 portion.

Ingredients

3-4 new potatoes - cooked, cooled and halved
zest of 1/2 lime
1 tablespoon olive oil
50g fresh baby leaf spinach per person - washed and drained
1 tablespoon olive oil
seasoning

Equipment

colander
tablespoon
frying pan
saucepan
fish slice

How to make it

1. Place the oil in the pan to heat. Tumble the halved potatoes in the lime zest. Add to the pan (cut sides down).

2. Allow to cook for 2-3 minutes taking care not to burn the lime zest. Continue to cook until the potatoes show slight browning. Serve hot.

3. Heat the oil for the spinach in the pan. Add the spinach and cook it for 30 seconds. Serve hot.

HOT TIP Take care not to to burn the lime zest, it will taste bitter
